whenever we make any curries with shrimp always buy uncooked shrimp. lot of times you can get tempted looking at those nice orange shrimps big ones that are sold in the market they are already boiled and that boiling and removing that water away takes nice shrimp flavor that we want in our indian curries and also when you go to buy the shrimp, try to buy de-veined shrimp freshly grated coconut, one large finely chopped onion, choppedgreen chilli
here i have soaked some red chilli and cumin seeds in vinegar and little warm water, salt coriander powder, whole garam masala turmeric powder, pepper powder, pinch of sugar, chopped tomatoes coriander leaves ginger garlic paste, mustard seeds some oil. add
some oil into your pan and add your whole garam masala that is cinnamon sticks, bay leaf, cardamom and cloves. once your whole garam masala slightly splutters add finely chopped onions, make sure your onions are finely chopped and then add little bit salt; cook your onions till they're brown in color, mustard seeds did i forget to put mustard seeds; no for this preparation, we're going to make a nice paste; while your onions are getting nicely
sizzled and getting cooked let's make a nice paste. i have soaked this red chillies and cumin seeds, put these things in a blender what i've done is, i have soaked these red chillies and cumin seeds in vinegar and warm water, and to this mixture add nicely grated coconut, little bit mustardseeds just a half a teaspoon, do not add too much otherwise it becomes slightly bitter and then add chopped tomatoes
now we're going to make a nice paste out of this. the onions are getting nicely browned here; as usual add little turmeric powder and add one tablespoon of ginger garlic paste. now that i have blended this paste this is not complete yet, we're you going to do some trick; this is what i have learned from one goan chef he said, hey! you do this and taste how the shrimp taste even more better, so what i did, i added just few shrimp into this paste
and i'm going to make paste of this again i'm going to add to this mixture to the my onions after you add the mixture, slowly let it cook in a medium flame and add around one tablespoon of coriander powder, half a teaspoon of pepper powder watch out if you are a mild eater first check how much spicy it is and add pepper powder now do not add any water just let it cook in a
slow flame and let this oil slightly ooze out from this mixture, that's when you know that this mixture is cooked. so friends let me ask you, have you every heard about using shrimp blending it and making it into a gravy before you add actual shrimp see this is what, this is these little secrets what ever i have learned during my you know work in the hotels and restaurants i want to share it with you that is why i insist, every household has the best chef in the world your mom, your sister, whoever cooks for you they definitely have some secrets

vinegar flavor and the chilli flavor, so now your gravy is pretty much getting ready, now let's add shrimp, ok you can remove the tail, shell part and cook but i like to keep the shell part in the tail because while i'm eating i can hold it with my fingers and eat so let's put this shrimp into this curry and also remember when you put in and cook, it will ooze out little water, so always try to make it little thicker gravy and add shrimp that will slightly thin your sauce. you can add your green chillies.
i didn't want to cook too much, add the chopped coriander leaves i just cooked it for 7 - 8 minutes and the shrimp is nice and look at the consistency of the sauce and the beautiful thing about this sauce is, it is got nice shrimp paste cooked with it in the gravy, i'm like tied and you'll be amazed how beautiful sauces can be made in different different styles. check your seasoning, if you want to add little more vinegar you can add but upfront use little less vinegar
