sometimes the best healthy meals justcome from playing around. i was having my italian friends over fordinner and i wanted to make them something fun. so i decided to combine something that iknow the love, lasagna, with our collective favorite cuisine mexican. this dish was so easy and fun to healthify and it turned out delicious so i just had to share it with you today.plus you guys are always requesting easy healthy dinner recipes.start by placing your extra lean ground beef into your skillet over mediumheat. today i'm using 96/4 which means
about 4% fat but you can use whatever you want. justkeep in mind that if you use regular ground turkey and not extra lean ground turkey breastthis will actually be less lean then the super lean beef.make sure you always read the label and fat content especially if lean is what you're going for. justbecause it's turkey or chicken doesn't make it more lean. also rememberyou can always use beans if you're going for a vegetarian dish.then you can add in your taco seasoning. i
like to use my homemade blend which may be found in my meal prep ebookbut you can use any homemade blend or a packet if you'd like. i like to makemy own so that i can be in control of everything that goes into my seasoning,especially that sodium. continue to saute until nice andbrown and cooked through and then you can add in a can of diced green chiles and some salsa, heat preference of your choice. mix to combine and set aside. now we aregoing to assemble the lasagna. pour some enchilada sauce
into the bottom of your baking dish. iam using green here but you can use red if you prefer. pick up your baking dish and swirl itaround to get a nice thin but completely covered layer of sauce. place 1 full and 1 half tortillaonto the bottom. these are going to serve as your lasagna noodles. i am using 1 whole in 1 halftortilla, you could use 2 whole if you wanted but why add those actual carbs? you are notgonna miss it i promise. on top of the tortillas we're going tospread our sour cream which is
actually just plain greek yogurt. theperfect substitute. then we're just going to a layer of spinach to get in some extra veggies, why not, and spread outhalf of our taco mixture evenly across the dish. now just repeat those steps with another tortilla layer, some more greek yogurt, spinach, the otherhalf of the taco meat, and finally 2 more tortillas on top. iwill finish with the 2 for beauty. go ahead and pour a little bit more of thatenchilada sauce on the top and finish it off with somelow-fat
cheddar cheese. it wouldn't be lasagnaor mexican without the cheese. but you will notice we didn't includeany cheese inside the lasagna it's only on top so this is really a pretty low fat dish. bake in an oven preheated to 375 degreesfahrenheit for about 20 to 25 minutes until thecheese is melted and bubbly and beginning to brown. allowto cool for about 20 minutes before cutting and devouring. this mexicanlasagna is so fun and flavorful if you have friends or family who lovemexican food this would be a super easy fun dish to prepare for them.
