hello my name is hui yau on behalf of expertvillage today we are going to cook a very common chinese dish beef and broccoli. weremove the skin for the garlic clove we just have to smash it as you can see it is veryeasy to peel it off once you smash it one more time. see. then we can smash it a coupleof more times to make it completely flatten and then we can start chopping down into mincegarlic into both ways up and down and make sure don't cut off your hands. before we cutthe ginger in chinese cooking usually we would peel off the skin cause we usually don't usethe skin cause you see how dirty or it is not good for our health. then be sure notto cut your fingers and then as i said before in this receipt we only need 3-4 slices ofginger.
