>>hilah: hey dudes! what’s up? i am hilah,and you’re watching hilah cooking. today i want to show you how to make a shepherd’spie which is like a casserole with lamb and vegetables and cheesy potato crust, and it’sreally yummy, and i am really excited to show you because you are gonna just love it! allright, i have got a hot skillet here, and i’ve got some bacon. i am just gonna fryit up a little bit, and get some of that bacon fat. all right that’s start to get fatty,and i am gonna add a whole pile of onions and some garlic. so this recipe is reallygreat because you can use any vegetables you want. i just actually make it when i was avegetarian i used to make it a vegetarian-style one and just use a whole bunch of vegetables,maybe some beans, maybe some kind of like

tvp or something like that. you could putcabbage in it if you want to make it like real irish kind of deal happening there, whatever,or oooh, you know what, super-short cut way i used to do sometimes too is just get likea bag of frozen mixed vegetables and add that with some onions, and then basically you’redone as long as you have left over mashed potatoes. that’s kind of the kicker. youneed those. we’re just gonna let these get nice and soft, maybe five minutes or so ona pretty high heat because i am impatient like that. all right, this is looking goodand smelling like an old, grandma’s kitchen, so i am gonna get my meat in there, and iam using lamb. like i said, you can use beef if you want to. you can even use turkey, whatever,and i guess that’s why it’s called shepherd’s

pie because it’s traditionally made withlamb because the shepherds would go out there with their flock. is that what they call it?and if there was like one bad sheep, bam! that sheep was dead, and that shepherd wasmaking a pie out of them, so that’s how they got all their sheep to fall in line.that’s probably not a true story. so just move around and break it up, and we’rejust going to keep moving it and shaking it until it’s all brown everywhere, smellinggood! daisy is getting excited. all right, so this is all cooked through. it’s timeto add our spices like salt, and pepper. sorry, i don’t want to talk like that, and i’vegot some rosemary and a little squirt of tomato paste. it’s going to make it have a nice,beautiful color. oh, my gosh, it smells so

good. okay, and then i’ve just got a littlebit of whole wheat flour. it is just is kind of going to make our little saucy gravy stuff.if you wanted to make it gluten-free you could use corn starch, and just mix it in with yourstock, and i am using a beef stock. you could use a dark beer would be nice or chicken stockor water, whatever, just some kind of liquid, probably not milk, just stay in. all right,now that’s in i am gonna add my carrots and celery and just kind of let this simmerfor 10 minutes or so, let these vegetables get soft. oh, my gosh, dudes! this is goingto be awesome. okay, i’ll see you back here in a few. oh, look at that boy! okay, turnthat off, and add my little frozen peas and little cute little pops of green. oh, my goshyou guys! this is going to be so good, and

then i have here. i have some mashed potatoesthat i made earlier, and just plain on mashed potatoes. if you needed, if you want a videotutorial on that just i have a video on that too, so go check it out, but this is alsojust totally great to make a leftover mashed potatoes. all right, once that’s all there,now we’re gonna sprinkle on a chee-ese, and i am using a sharp cheddar, but you mayuse what you like. a swiss perhaps would be nice, and since everything is cooked exceptthe carrots might need a little bit more and you know, whatever .we are going to put itin the oven now to let the cheese get melty and kind of have everything meld. so, yeah,i am just gonna put it in the oven for 10 minutes or so, whatever. all right, we areout of the oven. oh my god dudes. mmmmmmm,
