hello namaste salaamwalekum satsriyakaal; welcome back to another session with your vahchef at vahrehvah.com. today we're going to make fish kedgeree this is nothing but derived from our khichdi you know the britishers, one of the dishes they took back and modified and made their own version of breakfast khichadi and because they love to eat fish for breakfast they mixed both of them together that'swhen the kedgeree was born and this awesome kedgeree is very tasty so let'slearn how to make this for this
we are going to add some cumin seeds in a hot pan and also add bay leaf i have not added oil because i'm goingto use butter for this preparation greenpeace just mix this and now in this butter and green-peace, add curry powder in fact i have a videofor curry powder just check that
out and after you add the curry powder. add moong dal, when they make their fish khichdi i.e kedgeree they are not adding moong dal but adding this split green gram will give a very nice taste to your kedgeree and now in this add basmati rice you know the amount of moong in this i have added very less, just one tablespoon for one cup of rice
mix this add salt and add chicken stock. you know this chicken stock to this rice will make this rice fantastic. you know this more like a chicken stock pulao, wow for one couple of uh... basmati rice add around 2 cups of chicken stock
and then we are going to let this cook till rice is nice and done. now wow look at this the rice has absorbed most of the moisture now salt is just right i'm going to use a freshwater fish just uh... you know you can use anyfish you like some people like to use uh... flaky fish some people like haddock you know what ever fish you can get just uh... u know, make sure that it is boneless and
top it up with the fish and the fish will cook in no time, add crushed pepper you know reduce the flame to sim and put the lid on and now you let it just slowly cook in its own steam for another 2-3 minutes and switch of the flame, after few minutes offon a slow flame look at this
this is all cooked look at the rice you know perfectly cooked and wow look at this, this is done. now just uhh sprinkle some chopped coriander and some chop spring onion if you wish just mix the fish with the rice
and look at this this is perfect you know the rice also perfectly cooked, you know if you ask me i would want the rice to be a little bit mashed but forthis kind of uh... fish kedgeree. this is perfect i'm going to let it rest for another 2 minutes and i'm going to serve it hot with boiled eggs look at this. the fish the fish in a fish plate along with this nice kedgeree
uh... what a flavor, you know having fish for breakfast is not aindian thing to do, but when you have such kind of awesome khichdi, i'm telling you you will really love it and no wonder egg goes fantastic with this but do not forget vahrehvah is all about inspiring others to cook
