to make a tomato dal. we need boiled dal tomatoes, jeera, onion, salt, corianderleaves, garlic, turmeric, mustard seeds green chilly, curry leaves,red chilly powder, little butter and hing from each state the spices that is added differs like inmaharashtra they use more of fennel seeds that is saunf and each region they usedifferent kind of spices. let us prepare the masala to make a dal. to make thismasala for dal. add oil and add some mustard seeds ok, the mustard seeds have to crackle if they don't crackle they will leave little bitter smell

add jeera okay then a lot of people ask me why my dal isreally really tasty the secret to that is garlic, add good amount of garlic flakes ok so make sure you cook the garlic justfor like few seconds you don't need to cook the garlic reallyreally long time just till they get little transparent slightly brown on the edges, add little turmeric. ok mix it up and then add onions add little curry leaves and green chilliesand cook it for another minute see for this process you don't have to cook onions really brown or anything you

just have to sweat them so once theycome to a stage where they look transparent that is good enough you could add alittle salt to this always remember do not try to add theright quantity of the salt right from the beginning you had a little less salt then what isneeded for a dish so you can add the right consistency atthe end when you finish the dish based on the amount of water, based on the amount ofthe ingredients, you can add little more or less salt in the end. now when it is slightly getting cooked add your tomatoes

there are very few ingredients you canmake any dal ahh from this basic recipe if you add cucumber to this dal it becomes cucumber dal you can add ridge gourd you can add any vegetables and you canmake a dal from that vegetable. if your dish isgetting a little bit drier you can add a little water to the dishok now the tomatoes are pretty much cooked you can see the tomatoes oozingout a lot of water they're getting soft i love to add little butter in this. hmm

it really really smell good now. when themixture is cooked you can add dal to the the mixture and mix it yeah now that the dal is pretty much ready. so this a very basic tomato dal that is cooked pretty much in every household insouthern part of india when the dal is cooked. it is finished by adding aflavoring and eventually a tadka at the end of the cooking process. tadka consists of various spices or flavoring fried in a small amount of oil. tadka for each variety of dal varies by region and individual taste but common tadka combination include cumin, mustard seeds, red chilli, curryleaves

hing and little of urad dal but that it again varies by region. for tadka what we are going to do is we're going to add littlemustard seeds till they crackle and add red chillies then add cumin seeds cook it for a second add little bit of urad dal you know urad dal is optional if you wantto add you can add and little bit of hing based on if you have the tastefor the hing or not because hing is gives a very nice strong flavor and add your curry leaves and your tadka is ready

in english it is called, we call it tempering a dish pour your tadka on top of the dal so this is how you make tomato dal and you can actually add some coriander leaves when you're almost finishing itor you can put it on the topping and that will bring out extra flavor on top dal is the most nutritious and the mainsource of protein for many vegetarians of india. this dish can be served andenjoyed with rice phulka and some desi ghee on the top. ihope you have enjoyed today's session of learning to make dal
