Summer Sorbet Recipe

hi guys, i'm laura vitale and on this episodeof laura in the kitchen, i want to share with you, my recipe for what i call my jelly rollice cream bombe. now, there are so many variations you canmake, and definitely let me know if you want to see a different variation than this one,leave it in the comments down below. but, today i want to share with you, sortof my - it's a jelly roll, it has strawberry jam in there and then it's going to be withstrawberry ice cream and mango sorbet. it's phenomenal! it looks incredible, it couldn't be easier. you could definitely take a shortcut and buya jelly roll already pre-made, but today i

figured since i already have my ice creamand sorbet done, we'd make the jelly roll together! the ingredients you will need to make theactual jelly roll are very plain and simple once,s you will need all purpose flour, bakingpowder, salt, granulated sugar, some eggs that i have separated into yolks and whites,vanilla paste or you can use vanilla extract, and some milk. the oven is preheated to 375f, i also havea 15 by 10 inch baking pan here that i've lined with parchment - and you want to makesure that you spray it with non-stick spray as well because it can stick, even to parchmentpaper.

so, precaution. now i'm going to make everything in my standingmixer just because it's really easy, and the first thing i'm going to do, is i'm actuallygoing to whip the egg whites. i'm going to take my egg whites and put themin my standing mixer, make sure your standing mixer is clean. and i'm just going to whisk these until they'rereally light and frothy, and light stiff peaks, and when they're there, i'll show you whatthey look like! they look good! i don't need them to be too, too stiff.

i'm actually going to switch attachments,i"m going to now take my paddle attachment to finish the rest of the batter, but first,i just want to get the whites out because i don't need them until the end but i wantedto do them first because egg whites do not whip if your bowl is dirty, so in a case likethis, get the egg whites done first, and then make the rest of your batter. that way you don't have to dirty up anotherbowl. okay, i'm adding my egg yolks and my sugar,and now i'm going to just put on my paddle attachment. i'm going to cream those togetheruntil they're really light and pale and fluffy. it'll take a couple of minutes but you'renot doing it by hand, so let it go until it's

nice, pale and nice and fluffy looking! that looks excellent! i"m just going to addin a spoonful of my vanilla paste - by all means, you can use vanilla extract, but i'mgoing to use vanilla paste because i really want that vanilla flavor. blend that in, just for a quick second - doesn'thave to be perfect. lower this down. mix together my flour with the baking powderand the salt. going to add that in. whew!

along with my milk. and then we're going to pull this back upand then just mix it until it's all combined. and you do want this to be fairly, sort ofsmooth, but don't over mix it otherwise it can get a little bit tough. that is looking gorgeous, but we do have tofold in the egg whites, so i"m just going to do that with my spatula so that i don'tdeflate them too much. but try to get all the batter off your littlebeater here, or your paddle attachment. as much of it as you can, anyway. i love to always give everything a good stirfrom the sides and the bottom.

and now i'm going to add in my egg whites. going to do half at a time so that i don'tdeflate them and i can kind of work quickly. and you can see i'm folding it, i take myspatula, stick it right in the middle, and then you fold over. stick in the middle, fold over. that's such a gorgeous batter! i love that you can see the bubbles from theegg whites, that's just going to give you really beautiful, light cake. okay!i'm going to do my best to flatten thisas even as i can manage with my spatula. don't

panic if it's not perfect, because let's faceit, no one will know the difference. and i just always like to move around thepan because i think that just makes it easier. get it as evenly as possible. excellent! okay, this is going to go into your preheatedoven at 375f for twelve to fourteen minutes, or until it's a lovely light golden colorand cooked all the way through. since this is pretty thin it shouldn't takethat long. i'm going to put this in and as soon as itcomes out, i will show you the next step! my cake is completely cooked, it cooked forexactly fourteen minutes, and i always take

a toothpick - you can even take a dry pieceof spaghetti - stick it in the thickest part, if there's no wet batter on it, it's good! now, let it cool for about two to three minutes,no longer - maybe five. now, what i have here is a lint free kitchentowel, about the same size as the cake, and i'm going to cover this in some confectionersugar because we need to roll this up. so you want to make sure that you sprinklesome sugar, don't worry if it gets on your counter, it's totally fine. and now i'm going to - now i did take a knife- a butter knife and it just releases really easily because i did, i did grease it really,really well. and i'm just going to invert

this, just like so, if it sticks, do not panic. you see, making sure that it is really nice- oops! - and greased, really helps, and then i just try to straighten it as best as i can. and now i'll roll this around this way, soyou can see exactly what i'm doing, how about that? now just - you fold, literally, the towelin the cake. shorting.. shorting? ha, i started from one of the shorter ends and just rollthis tightly, but not too tight. just like that, and that will take the shapeof the jelly roll. now this has to cool completely, it couldtake a couple of hours, so i'm going to place

this on a cooling rack, allow it to cool completely,and then we'll move on to the next step. now, i did - i do have my ice cream in thefreezer already, i've got strawberry ice cream and i've got my mango sorbet. but i do know a great website - laurainthekitchen.com- who has both recipes for you if you want to make them from scratch, or if you wantto take a shortcut and buy them at the grocery store. the choice is entirely up to you. i'm going to let this cool completely andthen we'll move onto the next step. now, this was cooling for a couple of hours,and now i'm going to unwrap it. and don't worry if it looks wonky because that's - youknow, you want it to do that. because you

want it to go back into its same shape. and now, what i have here is some strawberrypreserves, you could use whatever preserve you'd like. i mean, it's totally up to you.and what i'm doing is i'm just spreading a nice thin layer of this. i'm not going togo all the way up, because as i roll this it will squeeze out. and as you can see there are some actual piecesof strawberries here and there so i'm going to try and get this as even as possible. kind of concentrating with leaving about aninch or so from all sides open, because, again when this gets rolled it does kind of squeezeout which is totally fine, but i don't want

to overdo it. this looks good enough, i don't want it tobe too, too thick. i'd say that looks perfect to me, could use a spatula, but clearly aspoon works really, really well. and now, i'm going to just roll this backup, this time you are not going to roll the kitchen towel in it. going to roll it just like that. perfect. and now, i'm going to put this - see it squeezesout a little tiny bit - we didn't put too, too much, so that should be good.

okay, i'm going to place this here, i'm goingto just wrap this with some plastic wrap, just a little bit because i don't want thisto get sort of hard, and i'm going to pop it into the fridge for around a half hour,or until it kind of sets and holds its shape, and then we will get ready to start buildingour bombe - ice cream bombe. my jelly roll was in the fridge for aboutan hour, now let me show you what i have here. i have a large bowl, and don't worry aboutthe dimensions and the measurements and everything because i will write everything in detailon, you know, on the recipe and it will be on laurainthekitchen.com. and i've taken a bowl and i've lined it wellwith some parchment - with some plastic wrap

- and you want to make sure that the plasticwrap is overhanging. i have a smaller bowl, which i'll show youwhat i'm going to do with it later. i have got some strawberry ice cream. i have leftit out at room temperature for about fifteen minutes i would say, you want this to be alittle soft and easy for you to work with, and then i also have an orange - some orangejuice, i just took an orange and squeezed it. okay, let's get going, using a serrated knife,i am going to cut slices of my jelly roll. now, i'm not going to cut them too, too thick,actually would it be better if i just used this? nah it wouldn't.

i'm going to just cut my slices, not too thick,not too thin, about, i would say about a half an inch thick or maybe a little bit less thanthat. now i'm just taking slices of my jelly roll,and if you need to tighten them up a bit, you can, i really do not do this in any particularorder, i don't worry about things looking perfect, because the end result is just sodelightful that it does not matter. and you just want to make sure that you cover thesides and the bottom of your bowl. you can cut them to fit, too. totally fine. just like taking a little bit of my orangejuice and just drizzling it on the cake, it keeps it a little bit more moist and sometimes- and i'm going to be very honest with you

- depending on who i'm making this for, dependingon the time of year, sometimes i do a little grand marnier, sometimes i'm doing a cherrybase, i do a little cherry brandy. doesn't matter, but today, i'm using orange juice. okay, the ice cream should be softened enoughat this point because you do need to be able to maneuver this around, and that is lookinggood. and if it peeks through the little holes,then that's fine. i just do like that, and then you kind ofpush it on the sides, just like so. try to get it as even as you can, and i'llshow you what we're going to do with that bowl in just a minute because the center isgoing to be where we put our mango sorbet.

but not just yet, otherwise everything wouldkind of blend all together. so, i'm just going to do this as even as possible,as quickly as possible because i don't want the ice cream to melt too quickly. then i take my bowl, i make sure it's a cleanbowl, and you want to make sure that it just fits perfect. and i'm going to do it just like that, sorryif i'm moving a little fast, but we're dealing with ice cream. okay, now what i'm going to do is i'm justgoing to wrap the sides like this, pop this into the freezer for about an hour or so,or until the strawberry ice cream is fully

frozen again and then we'll get going withthe last final layer! now i actually popped this into the freezerovernight - i had a hair appointment - what can i say? a girl's gotta do what a girl'sgotta do! hah! and it's also even better because that wayyou can completely forget about it and it gets nice and frozen. now, a quick tip: when you have your bowlin there, it's going to be quite frozen, so what i do is i take a kitchen towel, and isort of run it under hot water and then sit my kitchen towel in the bowl for a coupleminutes until it kind of starts to thaw the ice cream right around the bowl just a littlebit and then it comes out super easy and simple.

now, what i have here is some mango sorbet,and it's at room temperature - well not at room temperature, i left it out at room temperaturefor a bit because i want this to be really nice and smooth and pliable. now that i removed the bowl, i'm going tofill this with my mango sorbet. that looks really lovely, i'm going to savethat for myself. i'm going to cover this back up with my plasticwrap because you want to make sure it's nice and covered. i'm actually going to take this little plateand just sort of squeeze everything together. now, i'm going to pop this back into the freezerfor several hours, it needs to - the mango

sorbet needs to be completely frozen, it couldtake up to a couple of hours, and then it will be time to unveil this beauty. so once everything is frozen, and solid, it'sgood to go - now what i've done, i've just taken a small paring knife and just gone aroundthe edges, and just kind of sliced them so it's just almost one flat layer that way itholds better - it doesn't wobble as much when you try to cut it - but don't throw them away.cooks treat, you always have to have one of those, it's the best part of the job. nowyou're ready to serve it! it's very simple. now what i have here is my platter, this isjust a cake stand, a round cake stand.

i'm going to flip this around. now, we have plastic wrap, so that reallyhelps make the job a lot easier. i'm just going to take my chef's knife andi'm kind of dunking it into warm water, now i'm drying it off on a clean kitchen towel. and it'll go in really easy. and that makes for a really nice, clean - nowthis is a really big slice, because mainly i want to show you what - how beautiful thisis on the outside. i mean the outside is just gorgeous, and the inside is going to be evenprettier, so i take that. look at that!

is that not beautiful?! now, what you can do, you can also make thismultiple layer. so instead of doing two layers of ice cream like i did, you could do cherryice cream, chocolate, and just do a bunch of different layers, that would be reallyfun. but i like this combination because i thinkthe jelly roll with the strawberry jam and then the strawberry ice cream, which is socreamy and delicious, with the mango sorbet, i think it's absolute magic. i'm going to give this a try. that looks beautiful

let's give this a go, i'm going to have tohold on just a little bit because it's a really big piece. yeah, i want that right there. i want a littlebit of everything. i was going to do this, because i'm so usedto it! mmm. very cold though. that is awesome. it's got like everything you could possiblywant. really cold though!

(music) hi bold bakers! i'm excited to bring you anotherinstallment of my frozen dessert line up. this week we're making popsicles and withall of the flavors, there will be something for everyone. so let's get started! to freeze my popsicles, i have this lovelypopsicle tray that i got online and i put a link in the description box below of wherei bought this but if you don't have one of these do not worry. you can always use a disposabledrinking cup or you can always use an ice tray which every single house has. the first popsicle flavor we're making aretwo of my favorite summer flavors and that

is mango and strawberry. into your food processor, add in your mangochunks and then puree until really fine. when picking the fruit for your popsicles do notbe afraid to use frozen or fresh because both of them will work really well. sometimes frozen is actually better becauseit's picked in season and frozen really fast so kept in really good quality. transfer your lovely mango puree into a bowland then we're going to rinse out the machine and puree our strawberries. as you can see,it just takes a few minutes to get this lovely strawberry puree. nice and fine, this is goingto make a great popsicle.

now that we have our two purees, the onlyingredients that we need to make our fruit pops. we don't have to add any sugar becausethere's lovely natural sugar already in this fruit. to create a really pretty popsicle, i'm actuallygoing to put these flavors in in layers. so a little bit of mango. a little bit of strawberry.and then some more mango on top. once your popsicles are done then on with the lid. andin with your popsicle stick. the great thing about popsicles is that theyonly take around 4-5 hours to freeze so you'll be eating these little guys in no time. i made these earlier because i really wantedto show you what they looked like when they're

done. they look beautiful and they taste great,too. they're a perfect summer treat! the next popsicle we're making is the bestof both worlds. it's a little bit creamy and a little bit sweet and fruity. it is a creamsicle. in a bowl, add in your plain yogurt, cream,vanilla extract and some sugar and mix it really well together. so the reason we add sugar to the dairy isbecause if it froze on its own it would be like ice crystals so we add the sugar in thereto help it freeze and make it nice and creamy. however if you don't want to add white sugar,you can always add honey, maple syrup or even a natural sugar.

so we have our creamy layer done for our creamsicleso the next layer is fresh orange juice. now you can use store-bought or you can make yourown. to assemble this popsicle, we are going tofill up the mold halfway with our creamy layer. and then we're going to pour our orange juicein on top. when your molds are filled on with your lid and in with your stick. another lovely popsicle flavor ready for thefreezer, and as always my recipes can be found on biggerbolderbaking.com. when your creamsicle is done, it should looklike this. ta da! it looks fantastic. i know it doesn't look like a traditional creamsiclebut it sure tastes like one. i'm going to

try to get the orange and the cream at thesame time. oh that is delicious. if you like these popsicles, i have so manymore frozen treats on my channel along with lots of other baking videos so if you haven'talready done so, don't forget to subscribe. our next flavor up is definitely for the chocolatelovers and should evoke all of those lovely food memories of when you were young and thatis a fudgesicle. in a heavy bottom sauce pan, we're going toadd in our cream, milk and cocoa powder. and heat all of these ingredients until they cometo a simmer. now that your cream mix has simmered, we'regoing to pour it over our pieces of chocolate. i like to use dark chocolate because it makesthe popsicle that bit richer.

now you just want to let this mix sit andlet the chocolate melt for around 2-3 minutes and then we can whisk it all together. whati like to add to my fudgesicle is a drop of vanilla extract because it really lifts theflavor of it. our last step before freezing is that i like to sieve this mix to get itnice and smooth so when it's frozen you have a beautiful silky popsicle. go ahead and fill your mold all the way tothe top. put on your lid. and in with your popsicle stick. i'm particularly excited for these fudgesiclesbecause once they're set they taste like frozen mousse on a stick. they are absolutely divine.

when your fudgesicle is frozen this is whatit should look like. like a real fudgesicle. look at that, i have to give it a taste. thispopsicle is definitely for the chocolate lovers and i highly recommend having a little stashof them in your freezer. they're delicious. the next popsicle we're doing requires evenless work than the other popsicles. just two ingredients: lemonade and fruit and such abeautiful result. it is a lemonade popsicle. for the lemonade, i suggest you use freshlemonade. i actually made my own with some simple syrup and some lemon juice. and i lovea little bit of lime in my lemon juice because i think it really gives it a punch so i puta little bit of zest in there. go ahead and add your fresh fruit to yourmold. in the summer, i love peaches, strawberry,

kiwi, raspberry and blueberry. and then justfill up your mold with your lemonade all the way to the top. it's that easy to make thisbeautiful fresh dessert. i love this popsicle because it's so easy to make. once your popsicles are done then on withthe lid and in with your stick. now these little guys are ready for the freezer. how pretty is this popsicle and you can seeall of the fruit inside. make sure you use really good flavored fruit because that'swhat is going to make this so nice. mmm. it is so yummy! our next popsicle is definitely a feast forthe eyes and for the tastebuds and that is

a rainbow popsicle. to create a beautiful all-natural rainbowpopsicle, we're going to use the same method as we did for the mango & strawberry one.we're going to puree all of our lovely bright fruit to get all of the different colors andlayers. i'm using strawberries for my red layer. mangofor my yellow layer. kiwi for green. and of course, blueberries for blue. once you have all of your fruit pureed, we'regoing to add thin layers of each color into our popsicle mold. feel free to use any brightlycolored fruit you prefer. once your molds are filled all the way tothe top, we're going on one more time with

i was, like,what video do i have? i don't have any videos. i'm like, "oh, i have that video "of colette filming medancing around in the unitard. i'm just gonna put it on the internet." do you want to addressthe audience that thinks thatyou're pregnant, that we're havingyet another kid? - i'm not pregnant!i'm just fat!

- no, you're not.- thank you. - do you guys knowyour mommy's pregnant? - dad!- what do you guys think? we're oftentimes credited as youtube's first family. we were the first familythat's like, "we're a family, and we makevideos of our lives every day." do you guys remember the movie"jurassic park" with the dinosaurs? - yeah.- i'm gonna be the velociraptor,

and you guysare gonna be the people that are running for your lives. "and that wife's really cute." and then, all of a sudden, they're hooked, and they don't knowwhy they're hooked. they don't knowwhy they're watching. it's hard when you know there'sa camera on not to be like,

"hey, wow! oh, look, we're always havinga good time!" so at the timewe very first started youtube, i had just ventured out and started my own granite countertop business. so then i was trying to,you know, juggle the granite businessand doing youtube, and then i got my first checkfrom youtube which was for 300 bucks,

and i was like, "i got real moneyfrom making a youtube video." the second that i gotthat first 300 bucks and i could buy groceries, my immediate thought was,"i can make this grow." here we go. - when we first started making videos, it was just kind of, like, a hobby. it was fun. we were doing skits.

in my mind, i'm thinking,"a couple minutes a day. just throw it up real quick." and it became much more than that. [laughs]it became a diary of our lives. whoo!- ow. - come on, girl. come on. i met shay carl in 2007. - [laughing]- oh!

- oh, don't[speaks indistinctly]. - i guess it was 2009. he started doing these daily videos. throughout that whole process, we were alwaystalking back and forth. he's like, "dude, charles,you got to do this. "you got to do this, man.you got to do this. "i saw everyoneloving this thing. it's a really great idea."

365 days. i don't think anyoneon the internet could tell you legitwhat they were doing when they started doingyoutube videos other than giving youthe answer, "i was doing it for fun." the only part about travelingis rest stops. i always feel likei'm gonna get murdered by a guy named bubbaeating beef jerky.

- almost all of the vloggers that became famous got on youtube primarilyto connect and communicate. they didn't think of themselvesas being entertainers, per se. they were connecting to each other, and there was a greatdeal of energy behind that. - so we just got to the park.it's pretty cool. i didn't know there was a park.i'm just recording. the first one, i rememberthere was a cat skull. - it looks like a cat.- it's a cat head or something.

and i was dating alli speed.- get that out of here. - and i did have to convince her a little bit because it's weird. it's like, you know, okay,we just started dating. i'm gonna film everythingwe do now. - [laughs] both: one, two, three. - that was awesome. - how'd you sleep?

[laughs] you hammering that board? - hell yeah.ow. - it's a wishing wellsort of fountain. ready?you first. what'd you wish for? and then, 2009,i asked her to marry me, and because we were filmingevery day, that went online. - yes.

- you could never understand a vlogger through one video. you really have to followsomebody's arc, and that arc goes over years. it goes over many videos, and that's what makes it special is following somebody's arc from beginning to now. - told you it was gonna bea beautiful day, you guys. - we got engaged nine monthsinto our relationship and four monthsinto the vlog,

and the immediate responsewas really positive from a lot of peopleand, you know, we were--we weresuper excited about it. love you. - love you too. when we started, we got, like, 4,000 views, 5,000 views, whatever. it was small, and it just skyrocketed. 3 1/2 million people watched us get engaged.

so it's been crazy 'cause wheni thought--started doing youtube videos,youtube was so small. it was cat videos. and now, the community has grown bigger than i could ever imagine. - we were kind of just blogging here and there for fun. - and then it just turned intowe were doing it every day, and our audience loved it. they wanted moreand more and more.

- yeah, yeah. "when youstarting daily vlogs? when you start"--in every comment, i'm like, "they really want usto do it every day." - why do all these people watch me every single day? like, i'm just living my life. - i was like, "oh, wow. this is gettingsome traction here." - then i started talking aboutmy personal aspects of my life. i'm gonna talk aboutmy first kiss.

and that video went nuts. i got, like, 600,000 viewsback in 2006, which was a really big deal. - i had a video get500,000 views in, like, a week, and that was a big deal. - i think what makes itso interesting is that it's relatable. - the realness of it waswhat made a community grow. - this is that real person.

this is them,and that's probably one of the most common thingsthat people say when they meet me is, like,"you're a real person!" it's like, yeah. - camera.no. [laughter] - so hollywood, shay.- no. what have i turned into?- okay, do it one more time. - we started maker studioswith danny diamond, lisanova,

ben donovan, kassem g, philip defranco, dave days, whatadayderek. shane dawson was there at the beginning. me, you know,we had a bunch of youtubers that just came together and we started making videos together, and we startedgetting collab deals. - all right, guys,i think we're in business. are we all in?

- danny diamond, lisanova, they were revolutionary people in this space. - they were all major youtube,like, people at the time, and i was just kindof this small, kind of, like, comedy dude that wasn'tnecessarily there yet. - meet my less attractivefriend, jasmine. she's super ugly,but don't hold it against her. - lisanova's channel wasthe biggest channel on youtube for about six months.

i always said it was like the "saturday night live"of youtube. it was, like,all of these known creators that had way different styles. the cops came, and they thought that we were doinga porno shoot here. and we're like, "no, it'sa zombie video for youtube." when we started maker, there was no business plan for that specific type

of youtube productionmedia company. we're all figuring it outat the same time. - i'm not saying we were thebest in the game at the time. we were just the only peoplein the game. - through the last five years, it just slowly evolved. advertisers started seeingthe benefit of it. we got investors.maker studios was flourishing, and our family was really able to pay off some debts that we had.

okay.we're gonna film this. oh, we're super nervous. hey, dave.what's going on? - gonna make it, brother. how are you? - i am better than i deserve. i've been waiting to saythat to you for four years. - i do a talk radio show. it's about money and about life. we teach peopleto get out of debt.

- i have four kids and no debt. we've paid off about $195,000. - so what do you do and how much are you making now? - well, it's pretty unique,what i do. i'm basicallya social media expert. i'm, for lack of a better word,a youtuber. - youtube?you make money on youtube? how do you make moneyon youtube? - so there are threeprimary ways

whoo.- the second kind of revenue that started to followwas brand placement. - look at this, you guys. - so i used this. - i recently got a tonof awesome ikea furniture. - they could either work it into their videos somehow by either using a product or talking about a product, and just a like a rock band,you would find youtubers

who are selling shirts and hats and other kinds of merchandise. - we are launchinga brand-new merch shop, you guys, with the maker shop,and we're really excited. brand-new shirts,backpacks, posters! we have 500 posters here. - say, "ollie." - it would be a mistaketo think these vloggers are only in it for the money.

in fact, far from it. this started off firstas a hobby, as a desperate needto reach out and communicate with peoplewho share their values. and then, over time,it became a career. - we have some reallyexciting news, and we wanted to tell you guysat the beginning of the video. as a lot of you guys know, we'vebeen friends with the band we the kingsfor a very long time.

i've known them forever. they approached me and asked meif i would like to play bass. so surprise? [crowd screaming] i literally told to ctfxc, i was like, "hey, guys. "i'm gonna be going on tour a lot. "nothing's gonna change. i'm gonna filmevery single day still." going to japan.go figure, it's raining.

london.we're now in canada. we've been very, very fortunate, very successful album releases with the help of the internet as well. "we have to do an operation." and he goes, "all right, well, here's the deal. you're gonna be awake." - you know, we hadthe conversation. do we want to share this? it wasa really serious conversation.

- i was like,"i have to continue vlogging." i didn't want peopleto be disappointed that something they investedtheir life watching goes away because i stopped. - that was it. that was the decision. there was nothing elseto be discussed. we had a responsibilityto those people to be honestand to work together.

like, painful testingor surgeries. seeing what he's gone through and how he's handled it and the positivity that he's kept has been very inspiring for me. - yo! how many people does it taketo put together a grill? - think about the day that you got your webcam, and you turned it onand you just start talking. - i was gonna play drums.don't worry about it.

we're good. - if you think aboutthe very singular, probably alone experiencethat's happening, nobody could've possibly predicted what was about to come because they couldn't predict the need on the other side of the camera. - the family you're about tomeet was living on food stamps when they postedtheir first video on youtube.

is vlogging real life?" it depends on the vlogger. you see exactlywhat we want you to see. nothing more, nothing less. - can you be a brand and have the internet audiencesee your worst? because your worst happens. you're lying if you're notputting your worst out there. - i think people want you to be,you know, as real as you'd beto a friend, you know?

this site tracksthings like here. these are my dips. because the summer,you go through this thing where you're, like, at the max because everyone's offfrom school. everyone's watchingyoutube until september when everyonegoes back to school. it's just really analytics. - if you can read analytics in a sophisticated way,

it can help you figure outthose little things that you can be choosingto change to make yourselfa better vlogger. things like how far into thevideo are these users getting? maybe i need to speed up the way i talk or maybe i need to talkwith a little bit more volume or--you know,little things like that are the things that you can change so that that endgamegets bigger and bigger.

- i've been watchingmy live subscribers for the past few minutes, and every time i gain a few,i just lose a bunch. this is a live subscriber count, so it kind of just trackshow many subscribers you gain, whatever you lose. it's updated every two seconds. it's interesting to watchwhen you upload a new video because you'll loseor gain a few.

it's, like,a scary thing to look at, so i try not to look at that. it's kind of a sad, sad thing 'cause you can't reallymake videos that you want, like, where i can really show what i can do. check out what was leftat our house. i'm hovering. i could spend one day making a video doing girl products, and chances are the video will do four times better

butter, an egg, some milk that's been warmedup and i've got some sugar and some yeast. that's it! let's get started. we're going to get goingon activating the yeast. i've got my milk here, about 110 degrees fahrenheit. i'm going to sprinkle over my yeast and i'malso going to feed it by giving it a teaspoon of sugar. mix that around and i'm going to set thataside for several minutes or until the yeast is - you'll be able to smell it when it'sactivated and it gets all foamy and bubbly on top and that's when you know that you areready to get going.

mix your salt with your flour, so that that'scompletely ready to go. and now in this bowl, this - i'm going tomake this in my standing mixer because it does need to knead for a while, so in thebowl of my standing mixer, i'm just going to add my vegetable shortening that i've melted. i popped that right into the microwave, alongwith my unsalted butter. and then i'm going to add in my egg, and thisis really my all-purpose, like plain donut dough. it just works really, really well andmy glazed donut recipe - this is the same dough i used, i just doubled the batch wheni did those. but, it's just really perfect, it works really,really well, and if it ain't broke, don't

fix it! so i'm just going to give these a quick littlemix, i'm going to clean up, wait for my yeast to activate, and then we'll put the wholething together. we'll get it kneading, and we'll be that much closer to getting theseready to eat! you can see my yeast is activated and it'ssuper important when you're working with a yeast dough that your yeast is activated.so often, whether it's a doughnut recipe or my cinnamon rolls, or any dough that requires- any dough that's a yeast dough, i get so many e-mails from people saying that the doughdidn't work out, it's really hard and didn't rise. and chances are it's because your yeastis not activated.

and that can be a number of factors that canmake that happen, i mean, your liquid, in this case might not be hot enough, might betoo hot and kill the yeast, or the yeast might be expired. so, you need to be careful and make sure youryeast is activated, that way you will get a great dough every single time. i've added my yeast mixture, i'm adding myflour and just kind of giving this a quick stir with my spatula right before i put it- i get it to kneading. i'm going to put my dough hook on and i'mgoing to knead this on medium speed for about, i'd say, 5-6 minutes, you want a really nicesmooth dough, and it should only take about

5-6 minutes. so i'm going to put this on, lift it up, andlet it go! my dough was kneading for about 5 minutes,and it's exactly how i want it, it's nice and smooth. it looks like a little on the tacky side,but it's not sticking to me as you can see. but that's what i want, now i have my bowlhere - that's the bowl i had my flour in and i oiled it with just a little bit of vegetableoil, and just taking my dough scraper. now, i'm making a smaller batch, i halvedthe recipe in half because it's just my husband and i, and i don't want to make too, too manydonuts because i will eat them! hah!

so i'm just going to make some, and then i'mactually going to take these to - we're having a little get together tonight with friends,so i'm going to take them there. i oiled the top as well with whatever wasleft over on my pastry brush, and now i'm going to cover this with plastic wrap andstick it somewhere warm, i"m just going to put it in my microwave, with the microwaveturned off, for about an hour or so, you want this to double in size, and when it's there,we'll get going on rolling and cutting, and moving forward! my dough is about doubled in size, now thistook a couple of hours, and it can take up to three hours, so do not panic if it's notdoubled in an hour, just give it some time

and make sure the spot is nice and warm. i'm going to set that aside, i have a bakingsheet here with a piece of parchment paper and i've put a little bit of flour down, andnow i'm going to take more flour and sprinkle my board, i do have a fish spatula here becauseit's got a nice flat edge, it's going to be just the thing i need to lift my doughnuts,once i cut them, and i have a three and a half inch biscuit cutter, or you can use whateveryou've got that's round, use that. okay, going to just deflate my dough. just like that. and then i need to get it all out of here.

just pull this together with my hands, andyou can stretch it out with your hands if you want to, i'm going to take a rolling pinand just get this out to about a half an inch thick, now remember that i did cut the doughin half because i don't want to make too, too many, because this girl will eat themall. but you will have much more if you make thefull batch, which is completely up to you, so i'm just rolling this out and mushing itdown with my hand, and you can see i'm kind of flattening it, and then i'm also just gettingit to be as even as possible. i want this to be about half an inch thick. just going to take my biscuit cutter, i liketo dip it in flour, and then cut out my little

doughnuts. it's that simple! now, i'm going to cover these with a lint-freekitchen towel, and i'm going to stick them somewhere warm again, and they need to risefor about a half hour to an hour, or however long it takes for them to double in size. so, i'm going to put this right back there,it'll stay nice and warm, and in the meantime, i'm going to get a heavy skillet, or a heavypot, i'm going to fill it with some vegetable oil, and bring that up to temperature to cookthem in. they look gorgeous, you know just by lookingat them that they're going to be fluffy and

gorgeous. i do have some vegetable oil up to temperature,i have a large pan, really heavy bottom pan, halfway filled with oil. now, this is how i always tell it's the righttemperature. you put the end of a wooden spoon in, and i don't know if you can see, but there'slittle bubbles coming up. you see little bubbles around the base ofthat? that's how you know it's at the perfect temperature.if the bubbles are bubbling like ferociously, that means it's over 350f. you can use a thermometer if you want to.

have we met? hah! chances are, i"m not going to! chances are, i"m just going to wing it becauseit works, and it's just easy for me to remember. my grandma taught me that trick years ago,in fact if you watch our video of the graffe i made with her, of the italian donuts, shedoesn't use a thermometer either. so now i'm going to use my fish spatula becausei'm going to lift each one. and the reason i got a fish spatula is becausei can tap a little bit and the flour, the excess flour goes through the bottom of thefish spatula.

and i am going to just add them to my hotoil, you can see they are bubbling up really nicely. i am going to fry up just a few at a time,i don't want these to - i don't want the pan to be overcrowded. so i'm going to fry up about four at a time,and i also don't want the temperature of the oil to go down, and then we'll get reallysoggy and oily doughnuts. so i'm going to do four at a time, and i amgoing to cook these for about two minutes per side until they're a beautiful golden-browncolor. what i have here is a baking sheet that i'velined with some paper towels, because these

are going to need to - i'm going to put themon there so that the oil can kind of seep down into the paper towel. and then i have a shallow bowl here with somegranulated sugar, and i"m going to get some jelly ready and we'll get going to put themtogether. shouldn't take very long, should take a minuteor so per side, they're very quick to cook, and then i'll do the next batch and i'll meetyou back when they're all done! now, while the other batch is cooking up,i'm just taking the first batch that i just let sit on my paper towels for just a coupleminutes, and i'm dipping them in sugar. you want to do this relatively quickly, whilethey're still hot because that way the sugar

sticks. and then i always do it again after i pipethem with the jelly, but for now, i'm just going to continue to babysit the rest of themand then we'll fill them up. now, what i'm doing, and i've already donea few of them, i take one of these - i guess it's like a little lollipop stick or i thinkit's also known as a mini cake pop stick. one of these little things, you can but themanywhere. or any object in your house that looks likethis, hah! i take it, and i make a little, sort of alittle hole on one side, like that, and i kind of just wiggle it around.

this is how i do it, i am not a factory, thisis how it works for me. then i have a disposable piping bag with somestrawberry jelly in it - strawberry jam - anything - i wouldn't use preserves, because then itmakes it a little bit too difficult to come out of the tip. and then i just pipe it right in. and if a little bit comes out, perfectly fine! and i just continue to do them all, it shouldn'ttake long at all, you'll just take a couple of seconds. wow buddy!

they're delicious, and if you could just smellwhat i'm smelling in here, you would understand why i'm trying to hurry! they are all filled, and now what i do liketo do is, i just like to go in and dip the tops in a bit more sugar because i did disturbthem a bit as i was filling them, but whatever. i'm going to go right into it. i'm going togo with this one! hah, i'm so excited! anything on my face!? look! mmm.

mmm! life is sweet! pun intended. they are so much better than store-bought. i'm laughing at myself because i know i'mcovered in sugar. but that's okay. they are so much better than store-bought,they're fluffy, they're not too sweet, perfect amount of jelly. i mean nothing about these is bad, in anyway shape or form!
