hi i'm nadia lim and welcome to the healthyfood channel tonight i'm making spanish meatballs witha cauliflower and parmesan mash and honey baby carrots. this is a really good meal tomake if you've got people coming around for dinner. you can prepare everything in advanceand then when everyone arrives all you have to do is heat it up.for the meatballs i'm going to use half lean beef mince and half chorizo mince which willgive the meatballs an amazing really tasty flavor. either peel the skin off the sausages,or you can just squeeze the sausage meat out. add a little bit of salt and then get yourhands in there and mix it all together. the meatballs will hold together fine withouthaving to add any egg or breadcrumbs or flour.

roughly roll them and there you go; there'sour first meatball. for the sauce, gently fry some onion and garlicand then we'll add some crushed tomatoes, some smoked paprika, some thyme and some chickenstock. and then finally some butter beans. while the sauce is simmering away, we can get onto the mash.i'm gonna go half potato and half cauliflower. this is a great way to get more vegetablesinto kids, without them knowing. roughly chop the cauliflower then add it to the pot withthe potatoes. got some baby carrots to roast. all we needto add to the carrots is a little drizzle of honey, and a bit of olive oil and salt,and then we'll roast them for about 30 minutes until they're nice and caramelized.there's no need to panfry these meatballs;

they stay tender and juicy and moist justby cooking in the sauce. i've got about an hour until my friends arrive,so i'm gonna cook this through and then when we're ready to eat, all i have to do is heatit up. check to see when the potato and cauliflowerare nice and soft. mash it with a bit of butter and some raw garlic and then some lovely parmesancheese. and to finish off the mash, some chopped parsley. that's a good mash. so i've got some cauliflower-parmesan mash,some caramelized carrots with mint, and hereare the spanish meatballs. look there's meatballs! dig in. cheers, thanks for coming around. to good food, good wine and good company. for this recipe and more, go to my website
