Three Crockpot Recipes for Soup

happy monday everyone! as you know every mondaythrough january, i'm sharing delicious and nutritious slow cooker recipes that also happento be entirely vegetarian, so they are perfect for meatless monday. today's recipe is an absolutely staple inmy house, it is my chickpea curry with sweet potatoes and kale. what i love about this,is that it's super simple to put together and you can eat it as is, or freeze it forup to six months, so it's a great make-ahead meal. so we are starting with some classic flavors.i've got some onion and some garlic and some ginger. now, you have two options here. youcan either just throw these directly into

the slow cooker, that is fine. but, if youwant to make this extra delicious you should saute your onions, garlic and ginger firstbefore it goes into the slow cooker, that will really give you the most flavorful results. so in a frying pan, i've got some oil heatingup, and to that i'm going to add my onion. i'm going to cook my onion until it's softenedand translucent. then, i am going to add some garlic and some ginger. this doesn't takevery long, only about 30 seconds until it becomes fragrant. next up, we are going toadd our curry powder. now, i like to toast my spices a little because i find that's howyou get the best flavor out of them. you can skip this step if you feel so inclined.

i'm using about two tablespoons of curry powder,but you can use as much or as little as you really like. so we're going to toast up thosespices for another 30 seconds and then we are going to add some vegetable broth to ourpan. this is just going to help us loosen any of these flavorful bits that have stuckto the bottom of the pan. we're going to take this glorious mixture and pour it into ourslow cooker, and to that we are going to add our chickpeas, our sweet potatoes, and ourkale. we're going to top this all with a can of diced tomatoes. we're going to give ita good stir, put on the lid and then set it to low for 6-8 hours. the longer this guysimmers, the more flavorful it all becomes. when it's ready, you'll know because you'rehouse is going to smell absolutely amazing.
